Update Mobile Carrier Settings
I am using AIS in Thailand and the iphone prompt me to update carrier settings both on the phone and when I am connected to iTunes. So, I am wondering if I update the carrier settings, will I lose the JB and unlock?

No, it wont hurt the iphone. Those are usually just apn settings
