I am so happy to get my phone working - Could someone give me some input please :)

OK so after literally working on my phone cus it was stuck in the recovery state. for 11 hours straight. I finally got it to work.

Anyway. I wanted to get some ideas for GREAT apps and things to look at though cydia.

Im currently running.

Orbz theme
Lockinfo
Cyntacts (thinking about it, wish there was a trial)
Sbsettings
OpenSSH
Dock Flow Three
and SSHed my phone to make the "slide to unlock" text say "DC MAGIC!"

Anything else people might suggest to check out?

How did you get your dock looks like that.

Its called "Dock Flow Three". - Download in cydia. They dont actually "scroll" just looks like that. You also need to run "five icon dock". Which also can be found in cydia.

If you install infinidock, then I think it will scroll

Right now I have to use redsn0w and boot my phone in tethered mode every time I want to re-boot the device. So this means if Im out of the house, and my phone dies, I wont be able to turn it on until I get home and boot it with redsn0w?

Is there a possible way around this?

No way around it right now. Hopefully dev team can come up with a way to make it untethered.
