just the basic apps dl'ed via Cydia like sbsettings etc (not In stal lous/cracked apps). I thought that they were supposed to sync with iTunes as well but i may be mistaken and it might be only through SSH or something

Cydia themes, apps like backgrounder , winterboard don't sync with Itunes. All apps purchased or download from Apple can be synced backed, no piracy apps is allowed here or you will be booted out.

Unlockers (any carrier SIM) almost always need a custom firmware. Custom firmwares do NOT update the baseband.
