if i were to create a custom firmware with snowbreeze 2.1 for my 3g. will it keep the basebands unlockable by redsnow?

Yes. ONLY Pwnage and Snowbreeze create 'custom firmwares' that preserve the current baseband.

Note: You MUST enter DFU mode with Sn0wbreeze or Redsnow or Pwnagetool directing/helping, shift/click/restore from iTunes, new window, select custom firmware, then press ok.

Redsn0w doesn't unlock, it is Ultrasn0w that unlock, installed from Cydia after jailbreak.
If you are using Snowbreeze 2.1 custom fw to restore, you have to use ireb 4.1 RC2 first to bypass errors.
