Default 4.1 no longer allows editing plists?

I upgraded my iPhone 3G to 4.1 with no problems at all and everything is working fine.

Though I went to /var/preferences/SystemConfiguration to edit com.apple.wifi.plist and it looks all binary, not the XML it used to be.

Did Apple do something to where you can't edit plist files on the iPhone anymore?

    I'm trying to change DisassociationInterval

    Google gave me no results.

EDIT: NVM, I found iPodRobot Plist Editor for Windows.
