Here's my vague answer to your vague question.
"unjailbreaking" is just a matter of doing a restore in iTunes. Since you want to jailbreak again, don't do the default restore option (since it will load 4.0.2 which is AFAIK not jailbroken and won't be.)
So, grab an older firmware from apple and point the restore at that. As long as your shsh's are valid for that firmware, then you're good to go. Then, jailbreak with your tool of choice.

Perfect answer that I was looking for. I'm new at this so forgive the stupid question, could you clarify the part about grabbing an older firmware please? I have 4.0.1 on my 3gs now. My app store quit working, I can browse but when I try to buy it kicks me out so I have to buy from my Macbook. Rock and Cydia work fine. I was considering restoring and re-jailbreaking but I don't want to take a chance on getting 4.0.2. Thanks

Restore through Tiny Umbrella if you have 4.0 shsh blogs:
    Run Tiny Umbrella
Plug your iphone in, it has to be bootabble. If not, and you don't have shsh downloaded, you will have to retrieve your ECID manually and input into TU , saved shsh first.
Highlight your 4.0 shsh blogs in TU
    Start Tss Server
    Open up itunes.
Shift + Restore to 4.0 ipsw.
