How Do I Correct My Email in the 'Send' Field in Mail?

I'm running 3.1.2. My wrong email address pops up in mail. For example, when I email something to myself in the mail app, my email address pops up automatically in the 'send' field. But, its the wrong email address. How do I fix it so that my correct email address becomes the default email address in the 'send' field in the mail app?

when you go into settings mail you can choose which account you want as the default account to send emails...
other choice is to click on your mail account in the message to be sent and change it to the correct account.

i only have one account. and i prefer my corrent email address to come up without the wrong email address coming up. again, how do i delete the wrong email addy from appearing in the drop down menu?
