Will upgrading to 3.1.2 delete everything? (on 3.0 at the momemt)

Will it delete my music, apps (I know it willl delete the Cydia apps) and my videos and stuff.

Will it delete all of them?

Sync with iTunes 1st and then re-sync everything back once you're on 3.1.2.

You won't lose anything that iTunes syncs with (contacts, music, videos, iStore Apps etc).

You will loose any text messages and (as you rightly say) any Cydia Apps but there are workarounds for both if you search on here.
