Will 3Gs jailbreak allow me to access other network with ATT SIM?

I live in a rural area where there are only two networks (AT&T and Cellular One). With my old unlocked Motorola my phone would automatically switch between AT&T and Cellular One depending on coverage. At home I would be on AT&T and at work on Cellular One. By unlocking my 3Gs with Ultrasn0w will I be able to do the same?

Certainly, you will still having roaming ability.

I would assume his carrier is AT&T. I think you'd have to have a cellular one sim to access their network or enable roaming on your iPhone to access it. Either way, good luck

I have AT&T as my provider but at work I am roaming into Cellular One terratory. Unlocked, will my 3Gs switch over to Cellular One when their signal is stronger like my unlocked Motorola L7 did (with AT&T as provider)?

Being unlocked only allows you to use a sim other that AT&T. If you are able to roam now with your provider, this will not change.
