Need help unbricking iPhone

I have a newly acquired 3G iPhone. The phone was jailbroken and contained allot of personal information and I wanted to dispose of it so I got it into recovery mode and plugged it into iTunes. I 'restored' it and now, it's a brick. I can't pull the firmware information because the phone needs to be activated. It was upgraded by iTunes so I suspect it is running 2.2.
It is a Canadian Fido phone so I ordered a Fido sim. I want to do a legit activation so it will work with the Fido sim. ie. I don't want to jailbreak it unless I need to. I also want to be able to manage music and videos with iTunes.
I'm not quite sure what to do? Do I bring the phone to the store to have it activated? What IS activation? OR do I jaibreak it?
I have an expired Rogers sim and a unlocker sim(thin addon sim). When the phone was shown to me, it got bars on Rogers but could not make a call.(expired sim)
Now, it is no longer jailbroken and the sim I have is useless.

BTW, ... I've tried to jailbreak it and I get a 1600 error on iMac 10.5.6 and Macbook 10.5.5. I have the most recent version of iTunes on both machines. I have 'heard' that there is an 'activation' version of iTunes available where I can activate it at home, ... But is this AT&T only??
