iTunes "shift restore"

installed Categories, Poof, and Bosstools & moved fonts
restored iTunes backup

NOW... the only icons that i have on my screen are:
sms
youtube
itunes
app store
phone
safari
ipod
mail
4x blank icons

I used to use Categories in the backup that I used. I'd obviously like to get everything back. The whole point is so that I can try to use AptBackup to reinstall all of my old Cydia apps.
Someone mentioned flipping the Restrictions in Settings on and off. Unfortunately, I don't have the Setting App on my screen to click. Can someone please help me out?
