where does itunes store your backup iphone files?

hello,

i was wondering in what folder does iTunes store your iPhone backup files when you back up your iphone before a restore or a jailbreak.

also was wondering, is it one giant file for all items (sms, email, settings, photos, etc) or are they all individualized?

i want to just restore my sms messages since i accidentally cleared a whole conversation last night

i believe the backup files are not just out in the open.
