Help with extracting from restore point (PC)

I recently updated my IPhone from 1.1.3 to 2.1 using Pwnage for PC (including jailbreak et al). I did a backup of everything and sync'd in Itunes 8 prior to the upgrade. Post upgrade I had to create a new IPhone account in ITunes but was able to restore contact via Outlook. My problem lies in the fact that I need my notes and if possible SMS's that I am quite sure are in that restore that I did before upgrade. If there is anyway to extract these files, even if there is no way to get them back onto the IPhone it would be greatly appreciated.
