    You can't restore from the phone itself.... And I think if you restore from the latest backup it just updates you automatically.

    Not if you restore from a backup. Still can maintain jailbreak.

    I can't even get iPhone to wipe completely so I'm not sure where to go

    I do a reset all content and settings the thing just spins and spins I waited at least 15 minutes? Nothing just hit power and home and it reboots back

    Clicking on the reser all settings button will
    Make your device go into a boot loop...now you'll have to restore in itunes to fully fix it....no other way to fix

    Ok did that in dfu mode and iTunes wants to restore and Update, then I can't jailbreak right?

    If you're in a boot loop that was caused by you clicking the erase all settings button the only way to fix is to restore

    It's tethered, but you can jailbreak on 5.1
