Answer: iTunes. Sorry.
To use your own Ringtunes, you can simply convert your MP3's to AAC (which can also be done in iTunes). This will give them the extension .m4a, change this extension to .m4r and then double click on it. iTunes will automatically suck it up and place it in the Ringtones section. When you sync, they'll be moved to your iPhone.
Same with Movies, you need to Sync movies over with iTunes, otherwise the iPod will not see or be able to play them.
