Download Cydia app called AppInfo. Not only is it a great app that collects a list of your installed apps, versions and installation info. You can also export a list and send via email, including SMS, Contacts, Notes, etc.

Ssh to the directory: /private/var/mobile/Library/SMS
Copy sms.db to your computer

The same can be done for many others (ie):
When restoring, be sure owner is set to user:mobile

The backup/sync process via iTunes backs up the SMS messages. The caveat being there is no way to manage them or restore only SMS messages back to the device at a later time.

Sync your iPhone with iTunes to update your iPhone's backup. Use the utility provided or a similar type utility to extract and save this data from your iPhone's backup on your computer. After this data is extracted and archived on your computer, you can erase all from your iPhone.

Yes. Backup your iPhone with iTunes on computer and then use an iPhone Backup Extractor program to extract and view the messages from backup files on computer.

I use a tweak called sms2mail. You can email any or all of your texts to yourself in several different formats. If you want to save specific texts, this is definitely the way to do it

You can use a free utility called iTools to do the backup to computer. Get a copy from here iTools.hk
