Those lines in boot up are normal with jailbreakme.com.
Your cydia issue sounds like something you installed or a repo you may have added is causing it.

The only thing I installed on the phone was winterboard, ultrasn0w, and a theme to test it out.

Hm. Odd, ive never had a crash of Cydia if it worked to begin with. Only when it never worked before. I'd suggest a restore and re-jb, unless you've got a fix for it x98car?

Didn't you want to stay on 3.1.x?

If wallpaper is the focus, I would not put it on 4.2.1. It will slow the phone down as that's the feature that drags it down the most. 3.1.3 is best for it. But if you're insistent on putting it on 4.2.1, a custom firmware is necessary. Create one with Pwnagetool, if you don't have a Mac then find the custom fw via Google. You can try Sn0wbreeze for Windows but it is quite buggy for the iPhone 3G. It may or may not work well.

I guess I'll leave it on 3.1.3 then, I was just hoping that a newer OS would have less issues.

My iPod Touch 3G does really well on 4.2.1, I wonder why...

Even the iPod touch 2G runs 4.2.1 better than the iPhone 3G. It just isn't capable of running iOS 4 very well with wallpaper and multitasking enabled.

It's amazing that the iPhone 3G wasn't built as well as an iPod Touch. I guess it's the same as comparing the iPhone 4 and the Touch 4 to each other. I caught a review on AOTS that said it was better than the iPhone 4, that's a little bit ridiculous.

I would imagine iPod Touch has differences with the iPhone that make this so. Kind of like MacBook Air vs Pro. The Air is faster with what appears to be lesser specs, but the SSD makes it quicker than the Pro's hardware.

I dont know the differences in hardware build in iPod touch vs iPhone but I would imagine it is similar in concept with the MacBooks.

iPhone 4 runs better then iPod touch 4g in my experience. iPod touch 2g runs a little better than iPhone 3G because apple upped the clock speed of the processor for it.

You shouldn't be getting 3194 if you have an iPhone 3G. If you're getting that error then you don't have an iPhone 3G or you're pointingnto Saurik's server if you do have an iPhone 3G.

Any device that is not the iPhone 3G requires SHSHs to downgrade to 3.1.3.

I don't think you're understanding. You open tinyumbrella, under advance options you uncheck the box to point to Cydia on exit. And then you restore in iTunes to 3.1.3 stock. Then you'll get error 1015 after restoring. And then you use TinyUmbrella to exit recovery. And then you jailbreak as normal.
