the only thing I can think of is to ssh into your phone and goto
/var/mobile/Library/SMS
copy the "sms.db" file to your computer.
any text messages that are currently on your phone will be saved in that sms.db file. even if you accidentaly blow away you sms.db file you can put back the one you just saved.
you can them view them with a database reader (Sql lite in firefox works well)or put them back to your iphone in the same file structure incase you have to restore.
for example
I have a friend that suddenly died and had text messaged on my iphone from him.
Every time i restore I save this file and after restore and JB I put the file back. any messages that were in the sms.db file are back on my phone.
Also my wife is a teacher and she gets crazy text from parents whom she has given her number to to try to help their children. I use this method to save a back up of messages incase anything happens in the class room. Or a parent tried to say that tachers are no help.
Hope this at least helps. Ther may be other programs that back up text messages but i don't use them.Yeah I'm an iPhoneaholic!! So What!!!

I don't know of any other sqlite readers that would show the actual text format. I just do queries to find specific information. I mainly use the procedure to back up and do not worry about looking at them unless my phone is being restored.
