How to change number's label & how to specify alert hour in calendar?

Hello,

I'm on version 4.1 (jailbreaked) and I would like to change the labels of my contact's phone numbers.
For example, my dad has two mobile numbers, but I can set only one mobile number (the other can be "work", "home", etc.). And what if I would like to add a custom label, for example "restaurant"? How can I do it?

Another thing I would like to set is a different event alert than what I'm offered. For example, I can have 1 or 2 hours before, but not 3 hours (the next option is already 1 day before). How can I change that?

For the phone labels all you have to do is tap on the label. Some pre-set choices are gonna pop up, or you can scroll to the bottom and create your own.

I can't create my own when I scroll to the bottom...
