Default Can I Restore my backed up data without restoring my iOS?

    I have a 3GS, iOS 4.2.1, jailbroken, iTunes 10.1

I bricked my iPhone, then got it back and in the process upgraded to iOS 4.2.1 from 3.2.1. But when it got to the resore backup screen, I selected a much older backup than I wanted.

So, at this point, How would I go about restoring my info (ie: contacts, old text messages, app settings, etc) from a more recent backup that I did before bricking my phone WITHOUT messing with the iOS?

Just right-click on your phone in itunes and select restore from backup to see if you have a more recent one.

Well, that's what I want, unfortunately, the backup I want is not in the list. Is there a way that I can recover it from my weekly system backups?

It depends what type of system backups you have I guess.
