A little help doing this right (sshing, and setting up my phone) - PLEASE

Ok so i just successfully jail broken and unlocked my phone.

Iv been playing around with apps. and figured out which theme's and things I want to use. Just by downloading off cydia straight to my phone.

Now what I would like to do, is delete all the crap junk off my phone that I didnt like, so what i want to do is just reboot my phone with a fresh jailbreak again, and then re-load the apps that I know I want.

My question is. I want to do this by "ssh"ing into my phone? I believe this is the correct term, So for example, a purchased app. like Lockinfo. I would like to purchase and download it to my desktop on my comp, and then upload it to my phone. However I have no idea how to do this, or what programs I need to accomplish this.

So the end result. I have all purchased (and non-purchased) apps or themes saved on my comp. so if I need to re-download or re-jailbreak my phone from some problem, I still have them.

I know that there is one app (Orbz Theme) where you need to edit file names and things on your comp, and then ("ssh"?) put them into your phone. <-- this would be another example of what I am trying to learn to do at this point.

Ssh grab the themes or applications drag them out and make a folder on your computer full of the ones you want. Then restore and rejailbreak ssh again and drag the folders that you set aside back and bam your done.
