iphone - 2G v.3.1.2 problems.

Hi Guys..
Had my iPhone for about 2 1/2 Years now..no problems it is JB'd and Unlocked for all Sim Cards.
Since being in Italy on Holiday and using the local WIFI networks I think maybe I have caught a Bug.
My eMails and the attachments therein NO LONGER OPEN.
I can load all my Mails and the attachments are there BUT when trying to OPEN my Email attachments the PDF Files simply will NOT open and the iphone reverts back to the Home Screen closing my Mail Accounts.
Can it be that I have caught a BUG.?
I have thought about this and tried to Upgrade to 3.1.3 thinking this will wipe everything and I can start again.
I would like to keep all my Tel.Contacts, Videos.Music, Ringtones and Photos the Apps is NOT important I can get new ones.
My Q for the Experts will this work and How is the best way to keep whatever I need on the Updated version.?

By the way when I try to JB using the methods explained here
iTunes keeps asking me to Upgrade to vers 10 and NOT allow me to Upgrade to 3.1.3 with my v.9.1.
Is there a way around this..?
I know Guys lots of Q's but I am new to all this only ever done it once and then the phone was new with nothing on it anyway.

Just shift+restore to a stock 3.1.2 ipsw.

Then jb and unlock with Redsn0w 0.9.3.

Then restore from back up to get back all your contacts and apps and music etc.

Don't understand.. Should I not bother with iTunes then.?
Just get RedsnOw 0.9.3 and put the 3.1.3 and the two BL's (3.x and 4.x) using that Tool?
Cos I have downloaded the 3.1.2 and 3.1.3 S/W's and the RedsnOw 0.9.4 already.
I cannot seem to find my "back-ups" either..
Sorry about all the Q's but I am a real beginner here.
Just trying to understand all this.

You shouldn't have to upgrade iTunes if you restore to 3.1.2.

Yes redsn0w 0.9.4 and bootloaders 3.9 and 4.6. Your back ups can be restore via iTunes after you restore and rejailbreak the phone.
