App Store and folder Question

Hi there i have a couple of questions.

1)How do i get rid of the update from appstore When downloaded app from appcake+ or **********.

2) Whats the best prog in Cydia for creating folders on screen so i can rename them to games/apps/software etc so i can clean my screen up.
