Just wondering what the brainiacs think :)
I am a firm believer in nuking a drive and doing clean restore. When it gets slow, nuke, restore = happy fast phone.
Question is: What are your thoughts on nuking and restoring an iPhone every 6 months or every year ? Will it cause more damage over a period of time ?

I as you say, nuke when it is needed or a firmware update. It will not cause any damage, firmware updates happen every 6 months or so anyway, so nuke away my friend.

Restoring is healthy. I restore my phone about once a month or more. It is like a colon cleanse

When I was using my now fancy iPod/3G I restored at least once a month. However, since I now use the 3GS I haven't restored since I moved up to 3.1.2. The only reason I did it then was due to apps requiring a higher firmware. The lag on the 3G was a killer, but I have never experienced it on the 3GS

I restore every few months or so just to keep things clean. Uninstalls don't always go right and sometimes leave unwanted things.

I would find it very hard to believe that restoring often could cause any damage to your phone. The only negative thing that could come of it is if you accidentally restored to a new firmware that was not jailbreakable or worse you required an unlock and you updated your baseband.
