i used to have the same issue with vista 64
what i did and now this doesnt happen is
1.plug the cable into the usb
2.then plug your iphone into the cable
3.wait until your iphone starts charging ( u know its connected )
4.open itunes and let it recognise the iphone
since i used the method i now have no freeze issues
hope this helps

I'm running Win 7 x64 with iTunes 64bit as well. It does say "iTunes.exe *32" in taskmanager.
I don't have any freezing problems, but a couple things you can check...make sure your chipset and USB drivers are uptodate. Also, make sure your iTunes repository does not have any filesystem corruption...run chkdsk.

Try disabling "itunes helper" its a process running in the background that auto detects ipods and iphones and than instructs itunes to open. When it is disabled it take care of freezing and memory issues. This will make the process much smother. plug your iphone in and wait until it says charging. Than close all other applications and open itunes. If the problem persist check your itunes library files in the actual iTunes folder. The library files could be damaged and that screws with all sorts of things.

If you wanna thank me hit "Thanks" in the lower right of my post. If you think that I am a useless git feel free to say so.

Perhaps you have a permissions issue. If you've left Windows UAC enabled, make sure you run the iTunes installer as Administrator...right-click iTunes64Setup, select "Run as administrator".
