I've gotten nothing...
I've gotten nothing out of my jailbreak(except free apps of course). I try and cuztomize it with winterboard but the lag just makes me want to delete it and go back to default theme. I guess custom ringtones are cool but i heard you can just do that without a jailbreak. Is there something I'm missing?

Apps like backgrounder for multitasking. Apps like dtunes for movies and music. Like iblietooth for file trasnfer. Just to name a few

For me, the real value of jailbreaking is getting out of the Apple sandbox and being able to do whatever you want. Jailbreaking transforms it from a phone with a few cool apps to a pocket computer that can do virtually anything.

iphone without JB is crap, simply because I can customize the phone (put in a new design, if it's too much effort for you than don't so it, change texts, f*** the "call forwarded" popup, make my own carrier logo ...)
things I've got installed that make me want to jailbreak:
- battery control
- cyntact (definetly!)
- iblank
- openssh
- popup blocker (omg I so need this, but you probably won't)
- scrobbl
- springsorter
- etc.

Yeah the lag on the older iPods/iPhones sucks.
Keep the themeing light and you will be fine. The more you tweak your phone the more it lags. I got the 3GS and it is lag free due to it having double the RAM as the 3G. I love it.
