Can I Remove Stock Apps From iPhone?
Is it possible to remove stock apps on the iphone like, App Store, Weather, and Stocks? Just to let you know, I'm on an iphone 1G running 3.0.1.

From my experience, you can install sbsettings (via Cydia) and "hide" the applications so they're not displayed on the springboard.
Don't know about actually uninstalling them though.

well, it's possible, but I wouldn't. you don't have any benefit from doing it. if you don't need them, hide them via the "hide"-option from sbsettings (like the Blinkwing said) or install poof and hide it via poof (does the same as the sbsettings hide thingy, but if you don't need sbsettings you might wanna use poof)
