SSH Via USB 3.0 and up
I need to copy a bunch of files off of my phone and I want to do this via usb to make it a little faster. What is the best program to do this with?? I am willing to pay for the app but free would be much better.

If you're a windows user and familiar with the command line. WinScp will do the trick. Or at least did on mine, I don't recall if I had to add the package or if it came with the Openssh package at this point.
*edit* USB might be a different issue. I do mine via wifi.

if you use it via usb, it's not ssh. so much for the terminology. now for your question ... I've heard that iphonebrowser works pretty good
via wifi (that IS SSH then) I'd use winscp on windows and cyberduck on mac

you can use usb, 2 ways
1. iTunnel with WinSCP
2. iPhoneBrowser (easy, straightforward no hassle, no log-in needed too)
Just Google it, make sure u have OpenSSH installed first

iTunnel With WinSCP is the free answer
iPhoneBrowser is a rip-off as its just iTunnle and WinSCP in a nice installer package. All it does is take the setup out of the installation.
