You can add folders via your computer and sync those folders but from the iphone, no.

what he said. You must make folder named something like "iPhone pics" and than create sub folders inside. Than you point iTunes to "iPhone pics" folder to sync your photos that way.

I know it is stupid... and no you won't be able to delete the pics you transferred to your phone within the photo app itself... You must delete them from the computer and than sync again...
