Is there any disadvantage of not updating the baseband?
Like for those who do not care about the unlock, was there a better reception after each of the updates? or are all these updates mainly just to block out the unlock?

I was wondering this myself. If there is a disadvantage it would be worth it to be jailbroken.

if you can be absolutly sure you will never need to unlock your phone then you can update to 3.1 ... I mean, it will not bring you any DISADVANTAGE to have the new baseband.
I'm not an expert, but as far as I know it doesn't really make a difference. all apple does is make the BB smaller to reduce the possibility of security wholes that the dev team can use to unlock the BB ... if this really makes a difference for the enduser ... I doubt it
