iTunes Backups

Very weird question and the answer is probably impossible, but maybe?

I have an old iPhone iTunes backup in my computer.

In that backup, I need the info that I had in Notes.

Now obviously if I restore my phone and back it up with it, that'll work.

But is there any way I can access that info in notes without restoring my phone. I wouldn't want to lose everything then have to re jailbreak, etc...

Try syncing your phone from that back up. Right click on your phone in iTunes and choose sync.
The problem with doing this if you are jailbroken is that it may cause other problems but you should be able to get the info.
