So if I extracted all of the files out of an .ipsw file and edited them and stuff, would I be able to zip the folder back up with all the files that were in the .ipsw and restore using the firmware that was modded?

No... it won't pass iTunes integrity check. Pwnage tool does it in a way that patched all necessary files.
