I have been having Wifi issues and was going to restore my iphone and then start it as a "new one" on itunes, but was wondering if there is a way to restore my SMS messages.....?

SSH into "/private/var/mobile/Library" and download the entire SMS folder. Then when you restore and set up as a new phone SSH back into that location and replace the new SMS folder with the old one. It basically follows this process of restoring:

Don't you hate it when that happens?

...you are a bit late to the game. But for reference, iPhone PC Suite is probably the best for that. And a ton of other stuff!
