Delete Music/Videos Off Computer & Keep On iPhone

Like the title says.. I want to delete all my music/Videos off of computer but keep on my phone.. And at the same time be able to add more content later on without my phone being completely wiped out and replaced with the new content..

Any help, suggestions appreciated...

Select "Manually manage videos and Music" in the iPhone settings on iTunes.
