My itunes cannot read the iphone. It is wanting me to restore to factory settings. Is there a way to fix this issue without restoring to factory settings...since my iphone is unlocked?

You can try a reset- hold the power and home buttons at the same time until the screen goes black and comes on again (when you see boot logo).
If you do need to restore, if you have a 1st generation iPhone you can still unlock it. its only the 3G iphones that need to be cautions with the newest 2.2.1 firmware. If you have a 3G, just download a copy of the 2.2 firmware (NOT the 2.2.1) and in iTunes hold teh shift key when you click restore and select the firmware you want. Then jailbreak and unlock as usual.

Or use/download a custom created 2.2.1 firmware which bypasses the baseband upgrade.
