how do I "back up" in itunes. sync?

how is the process changed when I use pawnage and may have to hack-tivate?

    I've never used pawnage before.

tell me if this is correct

so i copy the file, save it on my computer.
then I upgrade in itunes to the newest firmware ... or do I use pwnage to upgrade?

iphone 2G 1.1.4 JB and UL currently.
