i have not had any problems. I sync my appointments with iCal, and my contacts with address book. Just make sure they are selected in iTunes.

Unlocking won't cause a problem synching.
Most likely corrupt data.He who asks a question looks foolish for 5 minutes. He who doesn't ask a question remains foolish forever.

I don't use a MAC so my advice is general and not specific.
Do you have an AT&T SIM to try it without jailbraking and unlocking?
How is it unlocked? YellowSn0w?
Can you try Synching on another computer? To another program (eg Outlook)?
Does it get partway through and then stop? If so, do you know how far?He who asks a question looks foolish for 5 minutes. He who doesn't ask a question remains foolish forever.

check that there is no sync conflict window under iTunes window, the conflicts are being reported by iSync, not iTunes, so you may be missing it.
