SETTING UP iPHONE ON iTUNES iF ITS UNLOCKED

So here is the deal, i have an unlocked phone 2nd Gen iPhone version 2.1
When i connect it to iTunes it asks me to set up the iPhone. Can i set it up even thou its unlocked?
if so, what would happen if i click on "automatically sync applications" and/or "automatically sync contacts, calendars, email accounts, and bookmarks"
