how can I go about themeing my 3g running 2.x?

Jailbreak, download Winterboard and then download themes to be applied with Winterboard.

isn't there a way to use a drag and drop method to copy themes into the folders

The folder is /private/var/stash/themes or /private/var/mobile/stash/themes (can't remember)
Use an SSH client to transfer files. The easiest way by far is to download them from Cydia though. There are hundreds and hundreds to choose from.

Even if you want to drag and drop themes, you will still need Winterboard to apply them. Alternatively you can manually SSH each .png file to its proper location.
