2 ways....

1. Install "Make it mine" from cydia, which will allow you to type in whatever you want it to say.

2. SSH into the phone and replace the carrier logos (2 of them) with your own.

another option (outside of Make It Mine) is to download Extended Preferences.

Once you activate it via Winterboard, its pretty much MiM in your settings app but has a bunch of other options too.
