Now I've lailbroken my iphone
Now I've jailbroken my Iphone 3G , I take it i don't download any software updates through I-tunes , is that correct ?

Every time an new firmware version comes out you have to wait for the dev team to hack the firmware and release it. Otherwise if you update your firmware and it is not jailbroken yet you will not be able to jailbreak with that firmware and will have to downgrade to previous firmware.

Correct. Don't update your phone or you will lose your jailbreak. You still can install Apps, Music, Ringtones, etc from iTunes.
