Can someone tell me where the photos are stored on the iPhone? And, can we extract them somehow via iBrickr, ssh, etc.?

    There will be various folders called 100APPLE, 101APPLE, etc. These have your photos!

    You should be able to use the camera wizard to select which you would like moved to your computer (for windows)

    Otherwise, try the iphone Drive from the guys at cr.ations.net

    Basically makes your iphone appear as a drive(again, this is for windows)
