PhoneView or PodWorks allow you to extract files from the iphone to your mac. These are "paid" applications.

You can always use your choice of SSH app (Cyberduck or WinSCP) if your are running a jailbroken iPhone with openSSH installed.
MP3 are located at /var/mobile/media/iTunes_Control/Music
Pix at /var/mobile/media/DCIM
Videos are located in the Music Folder also.
The format that the MP3s and Videos are in a coded naming system. The names will display the correct name when placed in iTunes.
If anything is wrong with this, please let me know.Last edited by merrimanc; 10-13-2008 at 08:41 AM.

SSH takes 5x as long as TuneAid.
TuneAid is free, imports with correct file names, song names, artists, etc, while some of this may be lost via SSH.
It also works on non-jailbroken devices.

I believe it does, but you can't get those any other way than a backup if it doesn't. It's a single large bitmap in an encrypted database file. The best you'll get if TuneAid doesn't work is taking screenshots of every photo, then copying /var/mobile/Media/DCIM
