you answered your own question.
if you dfu restore to stock firmware, apple have absolutely no way of seeing if you have ever been jailbroken in the first placeThe Original Autobot of MMiJesus couldn't turn into a fire engine

Depends which firmware you choose to install on the iphone. Default probably be the last firmware you downloaded with itunes.

HOLY **** AT THIS THREAD
Your warranty will be valid again after a restore, as no one will dig deep enough to find if you've jailbroken
DFU simply ensures that all traces are vanquished, if you're paranoid
If you hit the "Restore" button in iTunes, you will get 2.1. Apple doesn't care what firmware you're on.

well said, just to add though, if you are taking your phone back to apple looking for an exchange, it is best to restore to the latest firmware as then the genius cant turn round and say "it might be that you haven't updated to the latest firmware"
would save time of them restoring / sending you home to restore and make another appointment....
just a lil something to think about...The Original Autobot of MMiJesus couldn't turn into a fire engine
