Try a few things:
1. if you have a virus software such as Symantec/Norton you'll want to disable it for a few seconds. This will allow iTunes to recongnize the iPhone. I've had this problem with secondary iPods before.
2. with iTunes open and the iPhone connected undock/unconnect the iPhone from the connection with iTunes. Wait a few seconds and then connect it again to the sync cable or dock. This should connect the iPhone. I had this problem last night when first trying to put ringtones on via iPhoneringtonemaker.
Let us know what happens.<--- I'm new so don't hit me just yet.

I know I'm cross-posting this, but I've got the same problem here - I took a look at the link provided above but it's Windows or my Mac won't even detect the iPhone when I plug it in.
Any help would be awesome!

you dont get any errors or anything from itunes

What's also happening is that my iPhone is running just horribly slow - it takes forever to turn on, and I've got to press the home button a few times before it responds, and even then, it gets stuck showing just the wall paper for the longest time.
A bit more info - when I plu gin my 30GB iPod video iTunes recognizes it no problem.

'The iPod "iPod" could not be restored. An unknown error occured (-8).'
I tried this on a PC by the way, I'll give it a shot on my Mac and see what I get.
Haha, any more ideas?
I found the Lockdown folder - just about to delete the files in there[/edit]
Okay, so here's what I did to restore back to 1.1.1 on my Mac:
First thing, I rebooted my Mac
1. Put my iPhone into recovery mode
2. On my Mac, I went in the ~/Library/iTunes/iPhone Software Updates
3. I deleted whatever files were in there
4. Started up iTunes
5. Detected my iPhone - said it was in Recovery Mode
6. Click to restore - it redownloaded the 1.1.1 restore file
8. Now the iPhone is recognized when I plug it into my PC or Mac
9. Drawback - it's back to 1.1.1 - have to go through the steps to jailbreak/activate again
Just want to say thank you to those who replied back!
jjgsxr883 - thanks for the idea of putting the iPhone to recovery mode!

mmm wierd that shouldnt have done anything deleteing software updates but great you got it back from being dead..lol you`ll find out there some trial and error to modding the iphone

Yeah, I thought the whole deleting thing was weird too - but I was reading up on Apple's Support Discussions that there may have been an error while downloading the restore file (break in communication, etc.) - and that by re-downloading, it'll usually work. Hey, I can't complain, it helped me

Disconnect iPhone and close iTunes.
Go to Start, Control Panel, Administrative Tools.
Under Administrative Tools, Go to Services and look for 2 services.
Apple Mobile Device
Both services should be started If they are not, start both of them.
Start iTunes and wait for it to finish loading.
Reconnect iPhone. Voila! It should see your iPhone.
