Is there a maximum number of apps I can have?

Is there a limit to how many apps I can install: official and jailbreak apps?

What about pages? I think I remember reading somewhere that springboard supports 9 home screens? What happens when those are filled up and I install one more app. The guy at the link looks like he has only 6 home screen (the circles close to the bottom).

I had 9 pages at one time and everything worked fine. But never let it get to the 10th so I don't know. Try it, see what happens. At worst you would have to restore, but, You probably could just SSH in and remove a couple and you would work again.
