Can the iPhone switch between edge and 3G automatically to save battery?
Main Menu, Email = Edge
Youtube, Web, Google Maps = 3G

No, that is not possible to do as far as I know. There is a way to turn off the 3G connection off.
If you want to save ALOT of battery life. I would turn off location services. It is always communication with the GPS even if your not on maps. When you go into maps it will automatically turn back on as well.

You have to do it manually, it's not automatic. I'm sure someone will make this in a jailbroken app though.

I wonder if iphone would accept scripts, then you could run the script and it would do it automatically, simple and effective without having to tweak software. Maybe sometime in the future.

I hope someone creates an app... I get better edge reception in some areas so that would be great
