So what I am looking to do is install the IPhone Video recorder, but as I understand it before I can do that I need an installer, and before I get that I need to Jailbreak my 3G Iphone... which cannot be done (?) because the proper program is not out yet?
Am I on the right track here, or waaaaay off?
Please, someone have mercy.

You can currently jailbreak your 3G iPhone, but currently Installer is not available, and I do not believe Cydia currently has that specific application.

Video Recorder is not available for Firmware 2.0 regardless of installation method (Cydia, Installer, SSH etc).
