I have an iPod Touch 1.1.4 that I Jailbroke. Is it possible to upgrade to 2.0 and download App Store? Or will this break everything?

no it wont.. just do a restore on ur ipod to 1.1.4 then go an upgrade it to 2.0. nothing will happen to ur ipod

Just update and everything will be fine, you dont need to restore first.
