Adding Folders In Mail App
How can I get more folders in my mailbox and name them what I want?

You need to create the folders in the Mail application on your Mac (or Outlook for PC I think) and then sync those folders to your iPhone through iTunes.
Get "iPod & iTunes for Dummies", it'll change your life.

I tried this I am using Outlook and I cant get it to work.

In the iTunes "Summary" tab, are you clicking the mail folders you want to sync?
